Bharli Vangi is a delicious Maharashtrian dish made with stuffed eggplants

Ingredients:

  • 8 small eggplants (brinjals)
  • 1 cup grated coconut
  • 2 tablespoons roasted peanuts
  • 2 tablespoons sesame seeds
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander for garnish

Instructions:

  1. Prepare Eggplants: Wash and make a slit in each eggplant, keeping them whole.
  2. Make the Filling: In a pan, dry roast peanuts and sesame seeds. Grind them together with grated coconut, green chilies, turmeric powder, red chili powder, garam masala, and salt to a coarse paste.
  3. Stuff Eggplants: Fill the eggplants with the coconut mixture.
  4. Cook the Dish:
    • Heat oil in a pan. Add mustard and cumin seeds, letting them splutter.
    • Add chopped onions and sauté until golden brown.
    • Place the stuffed eggplants in the pan, cover, and cook on low heat for about 15-20 minutes, turning occasionally.
  5. Garnish and Serve: Once the eggplants are tender, garnish with fresh coriander and serve hot with rice or chapati
